Parsley is the herb of choice for a garnish, but it's also used in bouquet garnis, as the main ingredient in parsley sauce, and as an ingredient in soups and fish dishes. Native to the mediterranean, it's a rich source of vitamin C and iron, and is said to cure bad breath and cleanse the skin.
Petroselinum crispum 'Aphrodite' has good-flavoured dark green leaves with a tight curl. Leaves may be frozen but flavour is better when eaten fresh.
