Microgreens offer a burst of nutrients and flavours on our plates and can be grown from seed in as little as a week. Microgreens, or micro leaves, are the seedlings of leafy herbs and plants that we would usually allow to grow to full size before harvesting. Choose leafy greens and herbs that have good flavour when they're fully grown and you'll find their flavour even more intense in micro form. Here are 10 of the best to grow.
Radish
One of the prettier and quicker leaves to grow, with red stems and a heat that is great in egg sandwiches and good in stir fries.

Coriander
The tiny flavour-packed leaves can be sprinkled onto curries, noodle soups and stir fries - no chopping required.
Days to harvest: 14
Broccoli
Quite distinct in flavour from the full-grown plant, micro broccoli has a spicy flavour that will pack a punch in salads and omelettes.

Spinach
The mild, nutrient packed leaves are ideal for salads, especially when mixed with other more peppery leaves, or stirred into a risotto or an omelette.

Rocket
Growing peppery micro rocket leaves is a good way to avoid the problem of flea beetle that can affect the adult plants. Use to add a peppery kick to salads.

Beetroot
Use the red-stemmed leaves to add a splash of colour and a mild, earthy flavour to leafy salads. It is also delicious sprinkled over grilled mackerel.

Mustard
Choose the frilly and red-leafed varieties for extra interest, and sprinkle through stir fries and other oriental dishes for a fiery treat.
Fennel
Micro fennel avoids the tendency of adult plants to bolt, but has all the aniseed intensity you need. Scatter over fish or stir through pasta or a risotto.

Micro mizuna is another speedy grower that's ideal for adding a flash of green and a hint of pepper to salads and Asian dishes such as stir fries.

Basil
Highly flavoured, micro basil is easier to grow than the adult plant, which can be prone to rot and powdery mildew. It's delicious scattered over a tomato and mozzarella salad. Look out for purple varieties for extra colour.

Tip: You can also use the thinnings from herbs, salad and veg sown in the garden, such as purslane, as microgreens.
